The holidays are a time to spend time with our loved ones, reflecting on the year that has gone by and the year to come. Doing so gathered around copious meals is even better! I love the holiday season for what it stands for and the sense of community that arises from it.
Comfort food during the holidays will do just that: comfort you and put a smile on your face. And for this season of giving (and eating), you can serve your guests or bring to your countless potlucks a yummy creamy eggnog rice pudding. My mom used to make rice pudding for us all the time back in Haiti. It’s a dish that brings a warm fuzzy feeling inside! And to “liven it up”, add a little eggnog in the recipe and that’s it!
I tackle my eggnog rice pudding recipe as I would a risotto: constant watching to make sure that the milk doesn’t dry up and that my pudding is creamy. If you want to impress your guest for the holidays, read along!
INGREDIENTS
This recipe makes about 4 servings.
- 3/4 cup of long grain rice
- 1 1/2 cups of water
- 1 1/2 cups of Eggnog
- Pinch of salt
- 2 tablespoons of sugar
- 3/4 cup of milk
- Handful of Sultana Raisin
- Cinnamon for serving
INSTRUCTIONS:
- In a medium saucepan, bring the water to a boil. Add in the rice and salt, and reduce the heat. Simmer until the water is absorbed- for about 20 minutes.
- Add in the milk, sugar. Let it cook for about 15 minutes.
- Stirring frequently, slowly add in the eggnog until the mixture is creamy. Cook for about 10 minutes
- Add in a handful of raisins. Cook for a few minutes, still stirring frequently.
- Remove from heat and let it cool for about 5-10 minutes.
- Serve in bowls or glasses of your choice.
- Sprinkle a little cinnamon and Enjoy!
